The kitchen that started it.
In 2017, Linh Pham took over a failing 38-seat noodle shop on Wythe Avenue in Williamsburg, kept the wok station, and rebuilt the menu around Hanoi cha ca — turmeric-marinated fish grilled over charcoal, served loud and fast. The first eight months, she ran the line solo with Mai Tran pulling shots of Vietnamese coffee on the same counter.
II.
The chef-and-beverage partnership.
Linh runs the kitchen. Mai runs the program that has earned the brand a national reputation: 42 single-origin Vietnamese teas, a tea-cocktail list that swings from breakfast to last call, and a coffee program sourced through Diaspora Coffee Co. They plate, pour, and hire together. They have never opened a room without each other.
III.
The philosophy: share, ferment, pour tea.
Every dish is built around shareable small plates. House-made ferments — chili crisp, koji butter, fish sauce caramel — anchor the menu. The tea program is treated with the seriousness of a wine cellar. And the dining room runs until 1 a.m. Thursday through Saturday, because the best food conversations happen late.
